Spynoch Yfryed (Fried Spinach)
A healthy dish that Catherine would be happy to serve at table in Tudor England
2 lb fresh spinach
3 T olive oil
salt and pepper
raisins and pine kernels (optional)
Wash the spinach well and chop it roughly, then put it in a heavy pan without water over very low heat. Cover and stew for ten minutes, shaking occasionally. Heat the oil in a heavy frying pan. Add the spinach, salt, and pepper and turn it gently in the pan, over and over, until well coated with oil and dark green. Mix in raisins and pine kernels to taste and serve.
